r I Love Okra, fried okra, and pickled okra. And love it in soups too. I love growing it and picking it in the garden. I have pickled it before, but this recipe sounds yummy. Okra Pickles
Okra Pickles
3 lbs. okra, whole and about 3” to 4” long
3 c. water
1 c. white vinegar
1/4 c. pickling salt
2 cloves garlic, minced
Wash okra, and pack the okra into hot pint jars.
Combine the remaining ingredients in a medium pot and bring to a boil. Remove mixture from stove and slowly pour over okra into the jars, leaving about 1/2” head space from the top rim of the jar.
Wipe the rims. Put on the hot seal and ring.
Process in boiling water bath for 5 minutes.
Makes 4 pints.
